When you order a cocktail at a bar, 20% to 35% of what you drink is ice that melted during shaking.
The Melting Ice Paradox
Shaking or stirring over ice achieves two distinct transformations: thermal chilling (dropping the drink to -4°C to -6°C) and controlled dilution (introducing 20% to 33% water into the cocktail). Dilution softens the sting of 80-proof spirits, opens up subtle botanical aromatics, and balances sugar viscosity.
Calculating Freezer Door Added Water
Domestic freezers run at approximately -18°C. Because ethanol acts as antifreeze, high-proof cocktails like Negronis or Manhattans will not freeze solid; they turn into a dense, luxurious, viscous velvet liquid. However, without shaking at serving time, you MUST add approximately 20% chilled water (for stirred drinks) or 25% (for shaken drinks) directly into the bottle during batching.
